IS YOUR KITCHEN FIRE SYSTEM UP TO NJ CODE?

What NJ restaurant and commercial kitchen owners need to know about fire suppression systems — inspection requirements, system types, NJ code compliance, and when to upgrade.

WHAT IS A KITCHEN FIRE SUPPRESSION SYSTEM?

A commercial kitchen fire suppression system is an automatic fire extinguishing system installed above cooking equipment — typically under the exhaust hood — designed to detect and suppress grease fires before they spread. Unlike a standard fire sprinkler system, kitchen suppression systems use specialized wet chemical or dry chemical agents engineered specifically to combat Class K (cooking oil) fires.

When a fire is detected — either by a fusible link that melts at a specific temperature or by a manual pull station — the system discharges its agent through a network of nozzles positioned precisely over the cooking surfaces, fryers, griddles, broilers, and ductwork. Simultaneously, the gas supply is automatically shut off and the exhaust fan interlock is triggered to stop airflow that would otherwise feed the fire.

In New Jersey, all commercial kitchens with solid-fuel, liquid-fuel, or gas-fired cooking equipment that produce grease-laden vapors are required to have a listed fire suppression system installed and maintained under NFPA 96 (Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations) and NFPA 17A (Standard for Wet Chemical Extinguishing Systems). Failure to maintain these systems — including required semi-annual inspections — can result in violations, forced closure, and voided insurance coverage.

NJ INSPECTION REQUIREMENTS

Per NFPA 17A Section 7 and NFPA 96 Section 10.10, kitchen fire suppression systems must be inspected every six months by a licensed contractor. In New Jersey, this requirement is codified under the NJ Fire Prevention Code (NJAC 5:70). Each inspection must include the following:

Fusible links inspected and replaced
Nozzle placement and coverage verified against current appliance layout
Agent cartridge or tank pressure checked within acceptable range
Gas valve automatic shut-off interlock tested
Exhaust fan interlock tested for proper shut-down on activation
Manual pull station tested for function
Hood and duct clearances verified per NFPA 96
NJ Appendix N compliance report completed and left on-site

Inspections must be performed by a technician holding an ICC FK certification or equivalent state-recognized credential. Vanguard Hood Cleaning & Fire Safety employs ICC FK Certified technicians on every job.

TYPES OF KITCHEN FIRE SUPPRESSION SYSTEMS

Wet Chemical Systems (UL 300)

NFPA 17A

The current industry standard for commercial kitchen suppression. Discharges potassium carbonate agent that saponifies burning grease, forming a soapy foam that seals the fuel surface and prevents re-ignition. Required for all new kitchen installations in NJ.

Ansul R-102 Dry Chemical

Legacy Systems

Older dry chemical systems still in service in many NJ kitchens. These systems remain serviceable but may require upgrades or redesigns when cooking appliance layouts change. Our technicians assess compatibility during every inspection.

Carbon Dioxide (CO2) Systems

NFPA 12

Used in specific commercial kitchen environments, particularly for deep fat fryers and enclosed cooking equipment. CO2 systems suppress fire by displacing oxygen. Requires careful design to ensure personnel safety.

WHEN DOES YOUR SYSTEM NEED TO BE REPLACED?

Not every system that fails inspection needs full replacement — but some do. Common reasons a NJ commercial kitchen operator may need a new fire suppression system include:

  • —Expired or non-refillable agent tanks or cartridges
  • —System no longer covers the current cooking equipment layout after a remodel
  • —Obsolete dry chemical system incompatible with current appliances or insurance requirements
  • —Corrosion, physical damage, or missing nozzle covers that cannot be repaired
  • —Failed acceptance test that cannot be resolved through maintenance alone

Vanguard Hood Cleaning & Fire Safety handles new system design, NJ construction permit procurement, installation, and final acceptance testing. We install only UL 300 listed wet chemical systems — the current NJ-accepted standard for commercial kitchen fire suppression.
