COMMERCIAL KITCHEN FIRE SAFETY IN NEW JERSEY: WHAT EVERY RESTAURANT OWNER NEEDS TO KNOW
A complete guide to NFPA compliance, hood cleaning requirements, and fire suppression systems for commercial kitchens in NJ.
WHY KITCHEN FIRE SAFETY MATTERS
Commercial kitchen fires are one of the leading causes of property damage and business closure in the restaurant industry. According to the National Fire Protection Association (NFPA), cooking equipment is the leading cause of fires in eating and drinking establishments. Grease accumulation in exhaust hoods, ductwork, and on cooking surfaces is the primary fuel source for these fires. Left unchecked, a single spark can ignite grease buildup and spread rapidly through an entire kitchen exhaust system.
In New Jersey, commercial kitchen operators — including restaurants, hotels, schools, hospitals, and catering facilities — are legally required to maintain their hood and fire suppression systems in accordance with NFPA 96 (Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations) and NFPA 17A (Standard for Wet Chemical Extinguishing Systems). Failure to comply can result in fines, forced closure, voided insurance policies, and most importantly — serious injury or loss of life.

NFPA 96 HOOD CLEANING REQUIREMENTS
NFPA 96 Chapter 11 sets the standard for how often commercial kitchen exhaust systems must be professionally cleaned. Cleaning frequency is based on the type and volume of cooking:
A professional hood cleaning service includes grease removal from the hood canopy, filters, plenum, grease traps, and the entire ductwork up to and including the rooftop exhaust fan. Before-and-after photos and a signed compliance report must be provided after each cleaning per NFPA 96 Table 11.4.
FIRE SUPPRESSION SYSTEM INSPECTION & COMPLIANCE
Per NFPA 17A Section 7 and NFPA 96 Section 10.10, kitchen fire suppression systems must be inspected every six months by a licensed contractor. During a semi-annual inspection, a certified technician must verify the following:
UL 300 listed wet chemical suppression systems are the current standard for commercial kitchen applications. These systems discharge a wet chemical agent (typically potassium carbonate) that saponifies grease fires — converting the burning grease into a soapy, non-combustible layer. Older dry chemical systems (Ansul R-102) are still serviceable but may require upgrades depending on your appliance configuration and local fire code requirements.
FREQUENTLY ASKED QUESTIONS
How often does my hood need to be cleaned in New Jersey?
It depends on your cooking volume and fuel type. Most commercial restaurants require quarterly or semi-annual cleaning. High-volume or solid-fuel operations require monthly cleaning per NFPA 96.
What happens if I fail a fire inspection in NJ?
You may receive a Notice of Violation, be required to shut down until violations are corrected, and face fines. Your insurance policy may also be voided if you don't maintain code-required service records.
Do I need a permit to install a fire suppression system in NJ?
Yes. New fire suppression system installations require a NJ construction permit. Vanguard handles permit procurement as part of our installation service.
What is an ICC FK certification?
The ICC FK (Food Service Equipment) certification is issued by the International Code Council and validates that a technician has demonstrated competency in commercial kitchen fire suppression system installation and service.
How do I know if my fire suppression system needs to be replaced?
Signs include expired agent tanks, missing or corroded nozzles, outdated dry chemical systems, or systems that no longer cover your current cooking equipment layout. We assess your system during inspection and advise accordingly.
